Each cherry is squeezed and refractometer-tested at the tree. Under 22° sugar, it stays on the branch another week. Only 4% of the harvest makes this lot.

A light roast dropped ninety seconds after first crack — deep enough to caramelise, shallow enough to keep the stone fruit and black tea the mountain put there.
